Edinburgh
A Georgian terrace in the New Town, with the castle at the end of the street
Welcome to Edinburgh
Four Georgian houses on a New Town terrace, with views to the castle from the upper floors. Scottish seafood and game in the restaurant, and 170 single malts in the Still Room.
Scallops from Orkney, lamb from the Borders and a view of the Firth from the top-floor tables.
170 single malts, and a whisky tasting every Thursday.
From the fourth-floor rooms and the roof terrace.

The story
The terrace was finished in 1810 and has been a hotel since 1921. We’ve kept the cantilevered stone staircase, the cupola and the shutters that fold into the window reveals.
Everything else, from the tweed on the chairs to the oatcakes at breakfast, comes from within a day’s drive.
Eat and drink
Top-floor dining room under the cupola, looking north to the Firth of Forth. Seafood from the west coast and game from the Borders.

Spa
A small spa in the vaulted cellars: two treatment rooms, a sauna and a plunge pool.
